NERO D’AVOLA RISERVA
The Nero d’Avola is grown where lay the bed of a river, as evidenced by the typical rounding stones called “cuti”. The originality of the vineyard makes this wine unique and special, the intense and complex flavour of mature red fruits, as currant and plum, is merged perfectly with herbs and hints of cocoa. The taste expresses a warm, silky and dense texture, a persistent and pleasant enveloping. It’s a rich and powerful wine that can only deal with strongly flavoured foods such as stuffed or baked pasta, roasted venison and beef steaks on the grill. It is aged for 24 months including 18 in 500 liters tonneaux of French and American oak and the other 6 months in bottle. The fermentation takes place through a careful selection of the grapes harvested by hand. The malolactic fermentation in steel and the maceration of the destemmed for 15-20 days occur in stainless steel vats at a 25 ° C temperature.
