The Baccadoro is like the reflections of the sun on lemons, smelling like the Zagara in bloom, like citrus fruits freshly picked. Conflicting, in this sea of intensity, its freshness. It brings to mind the strange passion of the Sicilians, so sweet. Ideal to approach it, after meals, to traditional cuisine’s desserts. Best tried with almond cookies, with dried figs, with candied oranges. It’s a Sicilian IGT wine that comes from Grillo and Zibibbo’s grapes grown with the espalier pruned Guyot system. The winemaking consists, after a cold maceration of the skins for 12 hours, in the fermentation process at a controlled temperature and ageing in stainless steel vats. Best served at a 10-12°C temperature.
