The salt puffs are a thin layer of salt that forms on the surface of the salty tanks, in the rare days of calm wind. Due to the surface tension of the water, the salt puffs remain suspended on the water surface and the Saltmakers must collect it immediately by foaming it rigorously by hand. It’s a rich in magnesium salt, soft and naturally fine, without needing to be milled. The flavour that gives to the food is unparalleled, extremely delicate and round on the palate. Served at the table is ideal for exalting the flavour of the most delicate and sought courses and for all the raw dishes.
